Place Guest Chef Order (Tuesday) Entrees: • Butterfish – White miso, sake, black cod, sesame seeds, wild mushrooms risotto, black truffle oil, ginger braised brassica, miso burre blanc and micro greens • Filet Mignon – Kona coffee, coriander, wild mushrooms risotto, black truffle oil, ginger braised brassica, and fungi bordelaise Salad: Arugula – baby arugula, quinoa, pineapple, goat cheese, macadamia nuts, lilikoi Lambrusco vinaigrette (dressing on the side) Dessert: • Chocolate Haupia Pie – dark chocolate pudding, 62% cacao, organic Strauss, coconut pudding, young coconut juice, toasted coconut, chantilly cream • Banana Cream Pie – Tahitian vanilla pastry cream, organic bananas, toasted coconut, Chantilly cream Pick-up or Dine at Club

Two Options:

(1) Kona Coffee Candied Beef w/ Creamy Wild Mushroom Teriyaki Sauce Grass fed beef marinated and seared then topped with a creamy wild mushroom teriyaki sauce served with kamikaze mashed potatoes


(2) Huli Huli Chicken Cage free organic chicken thighs are marinated in a Maui Gold pineapple sauce then grilled served with kamikaze mashed potatoes (coconut milk, butter, roasted garlic, roasted corn and wilted spinach) and mixed summer vegetables.
